Time for some cheap lazy vegan recipes! A brand new series here on Yard Couch that we will continue to update over the next few weeks.
This week we’re talking “Tomato Cucumber Salad with Oregano and Mint (AKA Greek Salad). Also, we’ll share our lemon vinaigrette recipe as it goes hand-in-hand with this magnificent dish.
Obviously we’re ditching the feta cheese that is usually used in a greek salad. But if you’re not vegan then feel free to add some cheese in.
Did you know? “An authentic Greek salad does not include lettuce. It is quite common for Greeks to eat seasonally. A Greek salad is primarily a summer dish, and since lettuce only grows in Greece during the winter months a traditional ‘Horiatiki’ salad does not include lettuce.”

Tomato Cucumber Salad with Oregano and Mint (AKA Greek Salad)
- Organic Greens
- 1 pound Tomatoes sliced
- 1/2 Cucumber sliced on a bias
- 1/2 tsp chopped Oregano
- 1/2 tsp chopped Mint
- 12 Kalamata Olives
Spread greens on a serving platter. Alternate tomato & cucumber slices overlapping them slightly. Drizzle vinaigrette, crumble the cheese, oregano and mint over the top. Garnish with olives.
Lemon Vinaigrette Recipe
- 2 tbsp Lemon Juice
- 1 tbsp Orange Juice
- 2 tbsp Olive Oil
- 1 tsp fresh Oregano
- 1/2 tsp dried Oregano
Mix together.
