Time for some cheap lazy vegan recipes! A brand new series here on Yard Couch that we will continue to update over the next few weeks.
This week we’re talking “Spinach with Smoked Tofu,” and a quick vinaigrette recipe. This is the kind of recipe that will remind you why being a vegan is worth it. Smoked tofu is delicious, easy to make, and best of all, cheap!

Spinach with Smoked Tofu
- 1 pound Smoked Tofu
- 4 oz Shittake Mushrooms sliced thin
- 8 oz Spinach
- 1/2 medium Red Onion sliced thin
- Sunflower Seeds
- Sesame Seeds
Toss spinach, shiitakes, & onion. Top with smoked tofu. Toss with vinaigrette. Garnish with sunflower & sesame seeds.
Vinaigrette Recipe
- 1 tsp Dijon Mustard
- 2 cloves Garlic minced
- 1 tsp Chili Paste
- 1 tsp Ginger grated
- 4 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- 1 tbsp Soy Sauce
- 2 tbsp Orange Juice
Mix dijon, garlic, chile paste, ginger, soy sauce, balsamic vinegar & orange juice. Drizzle oil slowly and incorporate it into the mixture.
