Time for some cheap lazy vegan recipes! A brand new series here on Yard Couch that we will continue to update over the next few weeks.
This week we’re talking “Romaine with Avocado, Mango & Ginger Vinaigrette.” It’s one of the simplest recipes I know and only requires a few ingredients.

Romaine with Avocado, Mango & Ginger Vinaigrette
- 2 heads Romaine
- 1 ripe Mango
- 1 tbsp Pinenuts
- 1 Avocado sliced 1/4 thick
- Ginger Vinaigrette — recipe follows
- Black Pepper to taste
Discard bruised leaves. Slice, dice & tare leaves (whatever suits you).
Peel & slice Mango into 1/4 inch slices. Place Romaine in a bowl, toss with vinaigrette.
Add Mango and Avocado. Toss gently again then sprinkle with pine nuts & black pepper.
Ginger Vinaigrette
- 1/4 tsp Lime Zest minced
- 1/4 tsp Orange Zest minced
- 2 tbsp Lime Juice
- 1 tbsp Orange Juice
- 1 tsp Ginger
- 3 tbsp Virgin Olive Oil
- Salt to taste
Blend all ingredients but zest together. Add zest.
