Time for some cheap lazy vegan recipes! A brand new series here on Yard Couch that we will continue to update over the next few weeks.

This week we’re going to be discussing a “Surf & Turf Salad” and a dressing recipe to pair with it. We saved one of the quickest, easiest, and cheapest recipes for last (that is unless we continue this segment, let us know in the comments below).

Surf & Turf Salad

  • 1/2 cup Hijiki Seaweed
  • 1 Avocado
  • 1 tbsp Lemon juice (optional)
  • 3 cups Red Cabbage

Soak seaweed for 20 minutes or until soft. Rinse and drain. Peel and dice the avocado. Shred cabbage.

Dressing Recipe

  • 1/4 cup Rice Vinegar
  • 3 tbsp Mirin sauce
  • 1 tsp Sesame Oil
  • 1 clove Garlic minced
  • 1 tsp Ginger
  • 2 Scallions
  • 1 Jalapeno or Serrano Chili Pepper (seeded & minced)
  • Salt & Pepper to taste

Combine all dressing ingredients and toss with salad ingredients.
